Description

Fontal di Cavalese is a pasteurised cow’s milk cheese that ranks among Trentino’s finest dairy products. Belonging to the category of washed-rind cheeses, it stands out for its extraordinary creaminess and its sweet, delicate flavour, which makes it particularly popular with both adults and children.

The quality of the milk used, sourced from a carefully monitored supply chain, and the care taken during the maturing process give the product refined aromas and a unique character. As a guarantee of its origin and quality, Fontal di Cavalese bears the “Qualità Trentino” mark, a symbol of the region’s finest food and drink products.

First produced in the 1950s, Fontal is now one of the most representative cheeses of the Trentino dairy tradition, appreciated for its versatility and excellent organoleptic characteristics.

Tasting Notes

When cut, it reveals an elastic and uniform crumb, with a light straw-yellow colour. On the nose, it offers an intense yet delicate aroma, with pleasant milky and buttery notes. On the palate, it captivates with its soft texture and sweet, balanced and persistent flavour, which enhances the quality of the milk from which it is made.

Pairings

Perfect on its own, it is ideal for cheese platters, gourmet sandwiches and aperitifs. It pairs excellently with mountain bread, delicate honey, fruit jams and fresh vegetables. In the kitchen, it lends itself to fondues, toast, gratin dishes and baked dishes thanks to its excellent melting properties.

Storage

Store in the fridge at between 4°C and 8°C. We recommend bringing it to room temperature about 30 minutes before serving to fully appreciate its aromas and texture.
