Description
Trentingrana PDO is one of the most authentic symbols of Trentino’s dairy excellence and has always been one of the flagship products of the Caseificio di Cavalese. Made exclusively with milk collected in the valleys of Trentino, it is the result of an artisanal production process that strictly adheres to the regulations of the Protected Designation of Origin.
Over 50% of the milk delivered to the dairy is used for the production of Trentingrana, reflecting the importance of this cheese in local tradition and the regional economy.
Production
Trentingrana is produced according to the traditional method handed down through generations.
The production process involves mixing:
- Skimmed milk from the evening milking
- Whole milk from the morning milking
To this base are added natural starter culture, consisting of indigenous lactic ferments, and calf rennet. The milk is processed thanks to the experience and skill of the cheesemakers, who oversee every stage of production with care and expertise.
Maturation
Trentingrana is available in various stages of maturation, each with specific aromatic characteristics:
- 12 months: delicate and fragrant
- 14–18 months: balanced and more structured
- 24 months: intense and rich in aromas
- 36 months: complex, persistent and particularly suited to tasting
Organoleptic Characteristics
External appearance: Cylindrical shape with a hard, compact, golden-coloured rind.
Paste: Fine and grainy, light straw-coloured, with a typical crumbly texture.
Aroma: Intense and harmonious, with hints of milk, butter and dried fruit.
Flavour: Balanced and savoury, with a progressive aromatic intensity that increases with ageing.

- Shaved as an aperitif
- On carpaccio and salads
- With honey and jams
- On pasta dishes and risottos
- Grated over pasta
- With full-bodied red wines and mature white wines
The longer-aged varieties are also ideal as a cheese for meditation.
Storage
Store in the fridge, wrapped in greaseproof paper or a natural cloth, avoiding airtight containers which would alter its natural breathability.
