Description
Fior di Cavalese with Fiemme Saffron is a refined dairy speciality from Trentino that combines the quality of mountain cow’s milk with the elegance of saffron grown between the Val di Fiemme and the Val di Cembra, in the municipality of Capriana. A niche product that encapsulates the best of the region, where favourable climatic conditions and particularly suitable soils allow for the production of saffron of the highest quality.
During production, the finely ground stigmas of this precious “mountain gold” are added to the curd, giving the cheese its characteristic intense yellow colour and a unique aromatic profile. As the cheese matures, the saffron notes become increasingly pronounced and complex, enriching the cheese’s flavour without overpowering its balance.
Production
The distinctive feature of this cheese lies in the addition of saffron stigmas directly into the curd during production. This technique allows the aromas and colour to be distributed evenly throughout the cheese, enhancing both the milk and the spice without altering their natural characteristics.
Tasting Notes
Visually, it immediately strikes the eye with its intense golden colour. On the nose, delicate lactic notes emerge, accompanied by elegant spicy nuances typical of saffron.
On the palate, it is smooth and harmonious, with a pleasant initial sweetness that gradually gives way to the characteristic aromatic notes of saffron. The finish is long, refined and persistent.

Pairings

Storage
Store in the fridge at between 4°C and 8°C. We recommend bringing it to room temperature at least 30 minutes before serving to bring out its aromas and flavours.
