Description

Cavalese Cheese with Chives is a Trentino cheese made from pasteurised cow’s milk that combines the delicacy of traditional mountain cheese-making with the intense aromas of alpine herbs. Its distinctive feature lies in the addition of dried and rehydrated chives, sourced from Terre Altre, a social agricultural cooperative in the Fiemme Valley, which are incorporated directly into the curd before moulding.

The maturation period of around 30 days allows the cheese to develop a soft and compact texture, retaining all the freshness of the milk and enhancing the characteristic aroma of the chives, which blends perfectly with the natural sweetness of the cheese.

The result is an original, elegant product with strong ties to the local area, ideal for adding a touch of colour and flavour to cheese platters and aperitifs.

Tasting Notes

On the nose, it offers fresh and fragrant aromas, with distinct herbaceous notes that blend with the milky notes of the young cheese. On the palate, it is smooth and harmonious, with a pleasant sweetness enhanced by the unmistakable aroma of chives, never overpowering but perfectly balanced.

Pairings

Ideal for cheese and charcuterie platters, aperitifs and rustic starters. It pairs perfectly with rye bread, focaccia, grilled vegetables and delicate honey. Excellent with aromatic white wines from Trentino, Müller Thurgau, Pinot Bianco and classic method sparkling wines.

Storage

Store in the fridge at between 4°C and 8°C. To bring out its aromas and flavours, we recommend bringing it to room temperature about 30 minutes before tasting.
