Italy has always given us exceptional traditional dishes from North to South, and the variety of typical dishes extends not only geographically but also throughout the seasons of the year. In fact, there are dishes that were and still are savored during a specific time of the year.

Tagliolini with black truffle from Norcia
This dish traces its origins right from Umbria, specifically in the towns of Spoleto and Norcia, which are the home of the black truffle. Today, however, this delicious dish can also be found on the tables of the best restaurants in Italy. The recipe is prepared in a really simple way: noodles are chosen, which are a thin fresh pasta prepared with egg a lot, these are sautéed together with oil and garlic in a sauté and whipped with black truffle.
Orecchiette pasta with turnip tops from Locorotondo
Orecchiette con le cime di rapa (orecchiette pasta with turnip greens), of course, cannot be associated with any one village or town, as they are part of the culinary tradition of Puglia. Their origins, however, go right back to the province of Bari, and in Locorotondo they can be enjoyed excellently. This dish is now widespread throughout Italy and beyond, but orecchiette, in Apulia, are still prepared in the traditional way, that is, by hand, using the thumb, and only a knife as a tool.
Zuppa alla Castellanese or Sa Cassola di Castelsardo
Castelsardo is a very charming village in the north of Sardinia, in Anglona, very fascinating and rich in history, the whole village was built on trachyte rocks and was surrounded by a mighty fortification with many watchtowers.
Its typical autumn dishes could only be fish-based and the queen of the cuisine could only be lobster. Among the town’s quintessential autumn dishes is definitely Zuppa alla Castellanese, also known as Sa Cassola di Castelsardo, which is composed of different kinds of fish, including octopus, cuttlefish, gilthead, redfish, mullet, crabs, eel, shrimps, mussels and clams.

Pumpkin tortelli from Sabbioneta
In truth, they are not really a typical dish of Sabbioneta alone, because it is prepared excellently throughout the Mantuan, Cremonese and Brescian areas, but we wanted, however, to highlight this stupendous Renaissance village in such a way as to present this typical autumn dish in the best possible way. Pumpkin tortelli are made with ravioli, or half-moons, rectangular egg pasta that are filled with Mantuan pumpkin, amaretti biscuits, Cremona mostarda, parmesan cheese and nutmeg. In keeping with tradition, tortelli are prepared for Christmas Eve and served with the addition of good butter and Parmesan cheese.
Tortellini love knot of Borghetto sul Mincio
Tortellini nodo d’amore are small tortellini with thin pasta filled with braised meat. Their name is linked to the legend of two lovers who took refuge at the bottom of the Mincio River to escape their enemies, leaving a knotted handkerchief on the riverbank as a symbol of their love. This dish is featured during the third Tuesday in June in the love knot festival, but it is also tasted in September during the “Tortellini e dintorni” event, opening the fall season of taste and tradition.
Cuccià of Castelmezzano
This is the classic recipe handed down over the years among the inhabitants of this beautiful village in the Lucanian Dolomites. It is a dish characterized by a legume soup that according to tradition should be enjoyed on December 13, the day of Santa Lucia. The recipe consists of four ingredients, chickling peas, wheat, broad beans and chickpeas. And every year, just for Santa Lucia, a festival is dedicated to this dish.

Potato dumplings with ciuìga of San Lorenzo in Banale
It is the classic poor man’s dish, prepared in lean times, with the less noble parts of the pig along with turnip and ciuìghe. The ciuìga del Banale, now instead prepared with the best cuts of the pig, is a slow food presidium and can be enjoyed during the first weekend of November during the dedicated festival.
