Description
Pecorino Crotonese PDO Aged is one of the finest examples of Calabrian cheese-making tradition. Produced exclusively from 100% Italian sheep’s milk sourced from farms in the Marchesato Crotonese region, this Protected Designation of Origin cheese embodies centuries of expertise and a deep connection to the local area.
The long maturation period, ranging from 6 to 9 months, gives the cheese an intense and elegant character. The compact, slightly straw-coloured paste has sparse holes and develops complex aromas in which the herbaceous notes typical of Calabrian pastures blend harmoniously with the natural sweetness of the sheep’s milk.
On the palate, it offers a strong and persistent flavour, never overly salty, with a delicate spicy aftertaste that enriches its profile without overpowering its balance. During maturation, the rind takes on a brown colour and may be treated with olive oil or olive pomace according to local tradition.
In 2022, Pecorino Crotonese PDO was awarded the prestigious Gold Medal at the International Cheese & Dairy Awards, an international accolade that certifies its high quality.
Production
The pasteurised milk is inoculated with indigenous lactic cultures and processed using goat rennet paste. After the curd is broken down to the size of a grain of rice, the mass is semi-cooked, pressed by hand into traditional moulds and then immersed in hot whey. This is followed by a long maturation period which gives the cheese its structure, aromatic complexity and extraordinary lingering flavour.
Pairings
Ideal on its own, accompanied by homemade bread and traditional preserves. Excellent grated over pasta dishes, risottos and salads, it pairs perfectly with typical cured meats, honey, artisanal jams and full-bodied red wines from Southern Italy.
