Recipe: The Donut of Veroli. New Year all to taste

Once the donut of Veroli was prepared on the occasion of the New Year’s Eve by the housewives of the Santa Croce neighborhood with bread dough, then cooked in a wood oven. An ancient tradition that remains in the village even in the third millennium, when it is a pleasure to look to the future aware of its past. And also to enjoy a typical dish, easy and quick to prepare!

Ingredients

1 kilogram of flour 00
200 grams of brewer’s yeast
2 tablespoons of salt
water
aniseed to taste

Method

To prepare the dough, place the flour on the table in a fountain, to mix well with the water, salt, yeast and anise seeds. Obtained a well compact and solid dough, let it rest for a few minutes covered with a cloth. At this point divide the dough into strips of about forty centimeters long – and 4 centimeters wide -, then press the strips with a rolling pin, then twist and close the ends well giving the shape of a donut. Put all the donuts in boiling water until they come back to the surface – as for the gnocchi – then place them on a tablecloth to dry. Once dried, place them in a preheated oven at 180 degrees and cook for about half an hour. The donuts of the village of Veroli are ready when they have taken on a beautiful golden color.
