Pan De Mej is a typical dessert from the village of Angera that can also be tasted in other places in Lombardia. The name Pan De Mej comes from the fact that it is made with millet. Millet, together with other flours, was used to make bread.
Over time, the Pan De Mej has been transformed into dessert cookies and now I will explain you how to prepare them at home.
Ingredients:
- Flour 00 200 gr
- Maize Flour 300 gr
- Butter 150 gr
- Vanilla pod
- Medium eggs 3
- Elderberry Flowers
- Sugar 150 gr
- Powdered baking powder for sweets 16 gr
- Fine salt
Process
First, melt the butter in a saucepan, it will take about five minutes, meanwhile in a large bowl break the eggs and add the sugar and the vanilla pod. Mix the ingredients until you get a creamy mixture. Add the butter that you have allowed to cool in the meantime, a pinch of salt and start stirring again. You must obtain a cream.
Let the mixture rest for a moment and mix the flour with the 00 flour and the yeast and with the help of a sieve gradually add it to the cream of eggs and butter.
You must obtain a mixture thick enough to be worked with your hands. Shape the balls of dough that you will have to roll out so that they look like disks, lay them on a baking sheet on which you have put some paper from the oven. Sprinkle the biscuits with caster sugar and then icing sugar.
Cook for about 20 minutes in an oven already hot at 180 °, take out the biscuits and let them cool before serving.
