Traditional Balsamic Vinegar of Reggio Emilia PDO – Aragosta is one of the finest expressions of the Emilian culinary tradition. Produced exclusively from cooked grape must and aged in accordance with the strict regulations of the Protected Designation of Origin, it is matured for over 12 years in a series of barrels made from different types of wood, developing an elegant and refined aromatic profile.
Distinguished by the prestigious Aragosta seal, it has a smooth and harmonious texture, a delicate and persistent aroma, and a balanced flavour in which sweet and sour notes blend with a pleasant, tangy freshness. The long ageing process lends complexity and finesse, making it an ideal ingredient for enhancing both simple and sophisticated dishes.
Thanks to its versatility, it enhances shellfish, vegetables, raw and cooked meats, mature cheeses and gourmet dishes, adding a touch of authentic Italian excellence.
