Description
Pecorino Crotonese PDO Semi-hard is a true gem of the Calabrian pastoral tradition, made from 100% Italian sheep’s milk sourced from farms in the Marchesato Crotonese. This Protected Designation of Origin cheese represents the most balanced and delicate expression of Pecorino Crotonese, thanks to a medium-length maturing period that preserves its freshness, aroma and smooth texture.
The semi-hard cheese is compact, light in colour with sparse holes, whilst the rind takes on a characteristic slightly brown hue. The nose reveals elegant and delicate aromas reminiscent of fresh milk and the wild herbs of Calabrian pastures. On the palate, it captivates with its harmonious and enveloping flavour, characterised by a pleasant natural sweetness and soft, rounded herbaceous notes that enhance its personality.
Maturation for approximately 2–3 months results in a versatile cheese, perfect both for everyday consumption and for creating refined cheese platters.
Production
The pasteurised sheep’s milk is enriched with indigenous lactic cultures from the Consortium’s culture bank. After adding kid rennet, the curd is worked until it reaches the size of a grain of rice, semi-cooked and then pressed by hand into traditional baskets. The wheels are then steamed and immersed in hot whey, following the ancient techniques of the Crotone cheese-making tradition.
Pairings
Ideal on its own, accompanied by rustic bread and artisan preserves. Excellent on cheese platters, it pairs perfectly with honey, citrus marmalades, traditional cured meats and full-bodied white wines or young reds. Thanks to its versatility, it is also perfect as an ingredient in pasta dishes, salads and gourmet preparations.
