Description
Fresh Pecorino Crotonese PDO is one of the most delicate and authentic expressions of the Calabrian cheese-making tradition. Made with 100% Italian sheep’s milk from farms in the Marchesato Crotonese, it is the result of an artisanal production process that highlights the quality of the raw material and the region’s culinary heritage.
The short maturation period of approximately 15–20 days preserves all the freshness and fragrance of the sheep’s milk. The soft, uniform and creamy paste has a characteristic milky-white colour with sparse holes, whilst the thin, pale and edible rind helps to enhance its pleasantness.
On the palate, it offers a delicate, enveloping texture, with a smooth, slightly tangy flavour that gives way to a lingering sensation of sweetness. The fresh, milky notes emerge with great intensity, making this cheese particularly popular with those who appreciate authentic, delicate flavours.
Fresh Pecorino Crotonese PDO was awarded the Bronze Medal at the International Cheese & Dairy Awards 2022, a prestigious international accolade attesting to its quality.
Production
The pasteurised sheep’s milk is enriched with indigenous lactic cultures and processed using goat rennet paste in accordance with the PDO specifications. After the curd is broken and partially cooked, the curd is pressed by hand into traditional baskets. The wheels are then steamed and immersed in hot whey, developing the characteristics of freshness and softness that distinguish this cheese.
Pairings
Perfect on its own, it pairs beautifully with homemade bread, fresh vegetables, delicate honey and citrus marmalades. Excellent for preparing starters, salads and light dishes, it elegantly accompanies fresh white wines and aromatic rosés.
