The Stagionato from Azienda Agricola Natalina is a goat’s cheese that embodies all the authenticity of traditional artisanal cheese-making. Characterised by several months’ maturing on pinewood boards, it develops an intense personality rich in aromatic nuances, whilst maintaining balance and elegance.

Production
Maturation takes place on traditional pinewood boards, which encourage a slow aromatic development and contribute to the formation of the typical rough rind. During the maturing period, the cheese progressively develops structure, intensity and complexity of flavour.
Tasting Notes
Visually, it presents a rough, ivory-coloured rind that protects a compact, semi-hard paste, characterised by small, sparse holes.
On the nose, intense and persistent aromas are perceived, reminiscent of matured goat’s milk and the typical notes of natural maturation.
On the palate, it offers a bold and harmonious flavour, with a pleasant crumbly texture and a long-lasting aroma that brings out the full richness of the goat’s milk.
