Description
Recioto della Valpolicella DOCG Classico 2021 is one of the finest and oldest wines in the Veronese tradition, an authentic expression of the art of grape drying that has characterised the Valpolicella Classica region for centuries. Made from a rigorous selection of the finest Corvina, Corvinone and Rondinella grapes, it is produced only after a long drying process that concentrates its aromas, structure and complexity.
Although a sweet wine, it surprises with its balance: its rich sweetness is in fact supported by a vibrant freshness and a refined tannic structure that enhance its elegance and drinkability.
Vinification
The grapes are selected by hand and undergo natural drying for approximately 120 days, during which time they concentrate sugars, aromas and extractive substances.
The following steps then take place:
- Destemming and gentle crushing
- Cold pre-fermentation maceration
- Slow fermentation in temperature-controlled stainless steel
- Fermentation halted at the right moment to preserve the wine’s natural sweetness
This technique allows for the perfect balance between residual sugars, acidity and structure.
Tasting Notes
Visually, it presents an intense brilliant ruby red, enriched with elegant violet hues.
On the nose, it offers a refined and captivating bouquet, where balsamic and floral notes intertwine with hints of ripe red berries, sweet spices, tobacco and toasted nuts.
On the palate, it is full-bodied, rich and structured, yet surprisingly fresh. The sweetness is perfectly balanced by the acidity and a lively tannic structure that accompanies the sip through to a long, persistent finish dominated by black cherry, bitter cocoa and light balsamic notes.
