Produced through a quick and genuine process, it is often described as a cheese made ‘overnight’, precisely because of its very short maturation period, which preserves its freshness and the original aromas of the milk.
Its white, soft and delicate texture offers an enveloping and natural flavour that evokes the scent of freshly milked milk. Salted just once and ready to eat within a few days of production, it represents one of the most authentic expressions of traditional farmhouse fresh cheese.
