Recipe: Pan Ducale, ancient flavor of Abruzzo


As old as it is rich in flavor, the recipe of the Pan Ducale is a real piece of history of the village of Atri, which for four hundred years linked its name to that of the Dukes of Acquaviva, who reigned over it from the fourteenth to the eighteenth century. Since the beginning of the fourteenth century, the Atriani, at the time of its establishment, offered it to the Duke who was conquered to the point that, they say, he wanted a slice on the table every day. At the beginning of its production, this atrian delight was known as Pizza alle Mandorle, as a tribute to its main ingredient. Following the link that the sweet established with the family of Acquaviva, the recipe was then renamed, not by chance, to Pan Ducale or Panducale.

Let's see how to prepare it with a few simple ingredients:


⦁ 150 g. of sugar
⦁ 150 g. of flour
⦁ 45 g. of almond flour
⦁ 180 g. of butter
⦁ 5 eggs
⦁ 180 g. of dark chocolate flakes
⦁ 80 g. of almonds
⦁ 80 g. of candied citron
⦁ 1 sachet of baking powder
⦁ essence of bitter almonds
⦁ peel of half a lemon


Let's start by separating the egg whites from the yolks and whip the egg yolks together with the sugar until they become clear and frothy. Add the two sifted flours with baking powder. Chop the almonds leaving the skin and add to the mixture together with the chocolate flakes, candied citron and lemon zest. We also incorporate the whipped egg whites, making movements from the bottom up with a spatula or a wooden spoon, plastic or silicone to prevent them from disassembling. Finally, pour the dough into a previously greased and floured plumcake mold and bake at 170 degrees for about 45-55 minutes. Let's remember to do the test of the toothpick to evaluate well the cooking and once the dessert is ready, let's serve it ready to be taste.
