On 13 and 14 June 2026, Vallo di Nera will host the 22nd edition of Fior di Cacio, an event dedicated to the finest cheeses of the Valnerina and the Umbrian pastoral tradition.
For two days, the medieval village will be transformed into a grand showcase of flavour, featuring tastings, workshops, talks and performances, highlighting the deep connection between pastures, the local area and artisanal cheese production.
The stars of the show will be Valnerina’s raw-milk pecorino and salted ricotta, alongside the finest products from the Slow Food Presidia Village, with produce from various Italian regions. The variety of wildflowers on the local pastures imparts unique aromas and flavours to the cheeses, reflecting the authentic identity of the region.
The heart of the event will be the market exhibition in the streets of the castle, where producers and artisans will present traditional specialities and methods.
Among the most eagerly awaited events:
- the conference “Pastures, Products and Innovation”, dedicated to the development of the dairy sector;
- “Formaggissima in 3P”, a travelling tasting event featuring prosciutto, bread and cooked pecorino;
- “The Thousand Marriages of Cheese”, a multi-sensory journey through Umbrian cheeses and wines;
- workshops on the production of fresh cheese and the stretching of mozzarella.
On Sunday 14 June, the grand finale will see the arrival in the square of the traditional 80-kg giant ricotta, which will be handed out fresh to visitors.
Fior di Cacio will also offer outdoor activities along the River Nera, trekking along the transhumance trails, rafting, children’s games, folk music, street performers, street art and the traditional Ruzzolone competition, making the festival a complete experience combining flavour, nature and Umbrian traditions.
