In the picturesque medieval village of Dolceacqua, at the foot of the imposing Doria Castle, the traditional Frescioi Festival returns – one of the most distinctive culinary events of the Ligurian summer. An evening dedicated to the authentic flavours of western Liguria, where the stars of the show are the famous Ligurian fritters, prepared according to ancient local recipes.

From 8.00 pm, the food stalls open their doors to visitors, offering the famous frescioi made with salt cod, courgettes, trombetta mushrooms and apples – specialities that showcase the simple, authentic cuisine of Liguria. The menu is complemented by other typical local dishes and concludes with the traditional ‘Michetta’, all accompanied by glasses of Rossese di Dolceacqua DOC, the wine that symbolises the Val Nervia.

The festival continues amongst the characteristic narrow streets of the Rione Terra district, where bands and live performances bring the historic centre to life, creating an engaging and convivial atmosphere. Strolling through the stone-paved alleyways of the old town, you can enjoy an experience that combines local cuisine, culture and traditions.

The Frescioi Festival was established with the aim of showcasing Ligurian cuisine and the region’s finest produce, promoting local specialities and De.Co. (Municipal Designations) that represent the local culinary identity. The event offers visitors the opportunity to rediscover the deep connection between traditional flavours and the region where they originated, helping to preserve a culinary heritage passed down through the generations.

Set against the charm of the historic centre, the aroma of freshly made fritters and the elegance of Rossese di Dolceacqua, the festival is the perfect opportunity to discover one of Liguria’s most beautiful villages through its most authentic traditions.
