From 8 to 17 August 2026, Santa Fiora, one of the most charming villages in the Monte Amiata area, will host the 45th Acquacotta Festival, one of Tuscany’s most popular food festivals. For ten days, the Stadio Comunale becomes a meeting place for locals and visitors alike, all keen to rediscover the authentic flavours of the Maremma tradition in an atmosphere of celebration, conviviality and hospitality.

The undisputed star of the event is acquacotta, the ancient peasant soup that originated amongst the woodcutters and charcoal burners of Monte Amiata. Prepared with simple ingredients such as stale bread, onion, seasonal vegetables, tomato, celery, extra virgin olive oil and egg, this recipe tells the story of Tuscan peasant cuisine, transforming a few wholesome ingredients into a dish rich in flavour and tradition.

Alongside the acquacotta, the food stalls offer a wide range of specialities from the Amiata and Maremma regions, with events dedicated to some of the area’s most popular dishes. Among the unmissable events are the Bistecca alla Fiorentina on 11 August, the evening dedicated to snails on 13 August, the Charity Dinner on 9 August in support of the Meyer Foundation, the traditional Breakfast with Trippata on 16 August and, on 17 August, the dinner featuring the presentation of the ASD Intercomunale Santa Fiora squad for the 2026/2027 season.

The food stall will be open every evening and also at lunchtime throughout the festival, offering the perfect opportunity to discover the local cuisine and experience the authentic atmosphere of one of the most beautiful villages in the province of Grosseto.

The Acquacotta Festival is much more than a culinary event: it is a community festival which, for over forty years, has preserved and passed on one of the Maremma’s most iconic recipes, celebrating the culinary and cultural heritage of Monte Amiata.
