The municipal vinegar cellar of Castelvetro was founded in 2002 and it is led by the Master Tasters from the local community of the Consortium of Traditional Balsamic Vinegar of Modena. It is located in the premises of the Town Hall, adjacent to the public library. Upon entering the access door, you are greeted by the aroma of vinegar that is fermenting and maturing in “vasselli” (barrels). Traditional balsamic vinegar needs an adequate climate to be able to ferment, coming over the years to become the product of excellence recognized with the DOP mark. The Acetaia houses two batteries of seven barrels each, of successively smaller sizes, for reasons strictly related to the production of the Traditional Balsamic vinegar of Modena (ABTM). The casks are made of different woods like oak, chestnut, ash, acacia and cherry. The development project of the Acetaia, from the idea of Master Tasters of the local community, was then developed by the Municipality of Castelvetro, to enhance and promote the traditional production of Balsamic Vinegar in Modena territory, identity and heritage of the local culture.
