Effetto Trippa (Tripe effect) is one of the most intriguing and authentic traditions in the town of Volterra, a culinary event that celebrates 1 May, Labour Day, with a truly special breakfast.

What makes the event unique is its timing: the festivities begin at 8 am, when locals and visitors gather in the clubs and restaurants of the historic centre to enjoy Volterra-style tripe, a dish that symbolises local tradition.

This custom has its roots in the city’s history: in the past, the alabaster craftsmen, who were the backbone of Volterra’s economy, used to have tripe for breakfast before starting their working day. The event stems from this tradition and today represents a convivial occasion deeply cherished by the community.

Alongside the tripe, there is no shortage of other typical Tuscan specialities such as baccelli (fresh broad beans), pecorino cheese, spalla (cured pork shoulder) and local red wine, which round off a hearty and flavourful breakfast. From 10 am, bars and markets also open, whilst throughout the day the town centre comes alive with live music and performances that entertain visitors until the evening.

Effetto Trippa is therefore much more than just a gastronomic event: it is a popular festival that combines history, tradition and conviviality, celebrating Volterra’s identity through one of its most iconic dishes.
