Sapori del Borgo – Flavours of the Village

From 24 to 26 July 2026, the historic centre of Grotte di Castro, overlooking Lake Bolsena, will once again come to life with the 20th edition of Sapori del Borgo (Flavours of the Village), the event that celebrates the culinary excellence, traditions and authentic atmosphere of one of the most picturesque villages in Alta Tuscia.

For three consecutive evenings, the village’s ancient streets will be transformed into an enchanting culinary journey, where visitors and residents alike can stroll amongst food stalls, craft markets, exhibitions, performances and live music, enjoying an experience that combines flavours, culture and conviviality.

The star of the show will be traditional local cuisine, with dishes that tell the story and reflect the identity of the region. Among the specialities not to be missed are the famous ‘lilleri all’aglione’ – a traditional pasta dish from Viterbo – the prized lake fish from nearby Lake Bolsena, tasty grilled meats and a selection of traditional desserts prepared according to recipes handed down through the generations.

Along the culinary trail, there will also be numerous stallholders and craftspeople showcasing their wares, local specialities and handmade creations, offering visitors the chance to discover the area’s artistic heritage and local traditions.

Accompanying the tastings will be a packed programme of entertainment featuring live concerts, performances and music playing throughout the village’s squares, creating a lively and engaging atmosphere that will keep the public entertained until late in the evening.

‘Flavours of the Village’ also provides the perfect opportunity to visit Grotte di Castro, one of the most charming villages in the Tuscia region, as you stroll through its stone-paved alleyways, take in the panoramic views and discover the historical landmarks that tell the story of centuries of history overlooking the lake.

Now in its twentieth year, the festival has become one of the most eagerly awaited events of the summer in Viterbo, showcasing the region’s culinary and cultural heritage through an event that involves the whole community.
