La Repubblica del Gusto

La Repubblica del Gusto is one of the most eagerly awaited events of the late Ligurian summer: a food and wine festival celebrating the flavours of the sea and the fishing culture of the ancient Maritime Republic of Noli. From 4 to 6 September 2026, the picturesque Passeggiata dei Pescatori will be transformed into a vast village of taste, where tradition, identity and conviviality come together.

Now in its 21st edition, the event is organised by the Pro Loco of Noli with the support of the local council and the Slow Food presidia in the area. Local produce takes centre stage: over twenty stalls offer locally sourced delicacies, seafood specialities and traditional Ligurian dishes, promoting short supply chains and artisanal quality.

Strolling amongst the scents of the sea and the stalls, one feels as though they have entered a veritable “republic of taste”, where every bite tells a story of fishermen, nets and ancient recipes handed down through the ages.

One of the most fascinating moments of the event is the demonstration of seine fishing, an ancient traditional technique that has now become rare. Two fishermen, aboard a small fishing boat, lower a large bag-shaped net into the sea, whilst other men on the shore wait for the signal to begin hauling it in.

The net is pulled in slowly by hand, in a collective effort that evokes ancient and authentic traditions. The public can watch this fascinating ritual and, immediately afterwards, taste the catch fresh from the sea, in an experience that combines spectacle and flavour.

La Repubblica del Gusto is not just a food festival, but also an opportunity to rediscover the maritime identity of Noli, one of Liguria’s most picturesque villages. With tastings, tales of the sea and encounters with local producers, the event becomes a journey through the memories and traditions of a community deeply connected to the sea.
