It is based in Santa Maria Coghinas, in the province of Sassari, and is officially recognized by the Ministry of Agriculture.<\/p>\n<p>The Consortium performs exclusively institutional tasks: it protects the PDO mark, guarantees its correct use, and promotes it at an institutional level. By statute, it does not carry out sales activities or promote individual members. Its members include primary production and packaging companies of the Sardinian Spiny Artichoke PDO that adhere to the control system provided for in the regulations.<\/p>\n<p>The value of the Carciofo Spinoso di Sardegna PDO stems from its strong link with the island&#8217;s territory, which is particularly suited to its cultivation thanks to its unique soil, climate, and morphology. The coastal areas, valley floors, and central plains of the island, often close to the main waterways, offer ideal microclimates that allow for optimal crop development, enhancing its quality and typical characteristics.<\/p>\n<p>What sets this product apart is not only its appearance, characterized by its typical spines, but above all its organoleptic qualities: tender flesh, limited astringency, and a balanced flavor, in which bitter notes blend harmoniously with sweet ones. These characteristics make it particularly appreciated when eaten raw, a tradition deeply rooted in Sardinian gastronomic culture.<\/p>\n<p>The role of human resources is also fundamental: the long experience of farmers, combined with manual harvesting, sorting, and grading techniques, allows for careful selection of the best heads, maintaining high quality standards.<\/p>\n<p>From a historical point of view, the cultivation of artichokes in Sardinia has its roots in the Phoenician era. Over the centuries, the spiny artichoke has become one of the pillars of the island&#8217;s agricultural economy, to the point of being identified, in the collective imagination, as a true symbol of Sardinia.
