Also known as Kn\u00f6del, these large rustic dumplings tell a story of simplicity and ingenuity, born from the need to waste nothing and transform stale bread into a hearty and tasty dish.<\/p>\n<p>Every year, on the second Sunday in September, Vipiteno celebrates its signature dish with the <a href=\"https:\/\/www.sagradeicanederli-vipiteno.com\/en\/knoedelfest-dumbling-festival-sterzing-south-tyrol.html\" target=\"_blank\" rel=\"noopener\"><strong>Kn\u00f6delfest (Dumpling Festival)<\/strong><\/a>. One of the longest tables in the Alps is set up in the streets of the historic centre, where thousands of visitors can taste dozens of variations: with speck, cheese, spinach, and even sweet versions with apricots or plums. An event that combines gastronomy, tradition and community spirit, transforming the village into a festival of authentic aromas and flavours.<\/p>\n<p style=\"text-align: center;\"><img decoding=\"async\" class=\"alignnone size-medium wp-image-374181\" src=\"https:\/\/www.e-borghi.com\/wp-content\/uploads\/2026\/02\/Sagra-dei-Canederli-Vipiteno.jpg\" alt=\"\" width=\"100%\" height=\"auto\" srcset=\"https:\/\/www.e-borghi.com\/wp-content\/uploads\/2026\/02\/Sagra-dei-Canederli-Vipiteno.jpg 1900w, https:\/\/www.e-borghi.com\/wp-content\/uploads\/2026\/02\/Sagra-dei-Canederli-Vipiteno-768x513.jpg 768w, https:\/\/www.e-borghi.com\/wp-content\/uploads\/2026\/02\/Sagra-dei-Canederli-Vipiteno-1600x1069.jpg 1600w\" sizes=\"(max-width: 1900px) 100vw, 1900px\" \/><\/p>\n<h3>A humble dish that has become a tradition<\/h3>\n<p>Canederli have their roots in Tyrolean and Bavarian tradition, originating as a poor man&#8217;s dish in Central European peasant cuisine, widespread in Bavaria, Tyrol and South Tyrol.<\/p>\n<p>The German term Kn\u00f6del derives from &#8216;knot&#8217;, meaning &#8216;lump&#8217;, referring to the compact, round shape of these bread balls. Originally, they were simply made with stale bread soaked in milk or water and bound with eggs: a perfect example of anti-waste cuisine, when every ingredient was valued.<\/p>\n<p>Over time, the recipe has been enriched: speck, mountain cheeses, parsley and chives have transformed this basic dish into a true Alpine speciality.<\/p>\n<h3 style=\"text-align: center;\">Ingredients<\/h3>\n<p style=\"text-align: center;\">250 g stale bread, cubed<br \/>\n150 ml lukewarm milk<br \/>\n2 eggs<br \/>\n80 g South Tyrolean speck, diced<br \/>\n40 g grated cheese (or cubed)<br \/>\n1 tablespoon chopped parsley<br \/>\nChives to taste<br \/>\nSalt and pepper to taste<br \/>\n1 tablespoon flour (if necessary)<br \/>\nMeat broth or melted butter for serving<\/p>\n<h3>Procedure<\/h3>\n<p>Place the stale bread in a large bowl and pour the warm milk over it. Leave to rest for about 10 minutes. Meanwhile, prepare the mixture.<br \/>\nCombine the eggs, speck, cheese, parsley and chives. Season with salt and pepper and mix with your hands until the mixture is compact. If the dough is too soft, add a tablespoon of flour.<br \/>\nWith slightly damp hands, form balls the size of a tennis ball.<br \/>\nBring a pot of salted water or light broth to a boil. Lower the heat and gently immerse the dumplings.
