Although it requires quite long preparation, given the prolonged baking of the meat, it is definitely a tasty and rich dish. Today we will see a variation famous especially in Varzi, the one prepared using <a href=\"https:\/\/amzn.to\/2NHOOdN\" target=\"_blank\" rel=\"noopener\">Bonarda<\/a> wine for brazing.<\/p>\n<div class=\"row\">\n<div class=\"col-xs-4 ricettaSinistra\">\n<h3 style=\"text-align: center;\">Ingredients for 4 people<\/h3>\n<p style=\"text-align: center;\"><em><strong>For the dough<\/strong><\/em><br \/>\n400 g flour<br \/>\n4 eggs<br \/>\n1 cup of water<\/p>\n<p style=\"text-align: center;\"><em><strong>For the filling and seasoning<\/strong><\/em><br \/>\n500 gr beef<br \/>\n100 gr grated parmesan cheese<br \/>\n1 egg<br \/>\n50 gr dry breadcrumbs<br \/>\n4 tablespoons of oil<br \/>\n50 gr butter<br \/>\n2 onions<br \/>\n2 carrots<br \/>\n2 stalks of celery<br \/>\n10 cloves<br \/>\nhalf a cinnamon stick<br \/>\n5 bay leaves<br \/>\nsalt<br \/>\n2 bottles of Bonarda red wine<\/p>\n<\/div>\n<div class=\"col-xs-8 ricettaDestra\">\n<h3>Method<\/h3>\n<p>We begin by saut\u00e9ing, in a fairly large saucepan, the beef with oil and butter. We add the cloves, cinnamon, bay leaf, the rest of the chopped vegetables, salt and cover everything with bonarda. Let it simmer for an hour and a half on low heat.<\/p>\n<p>After removing the cooking juices, which we will strain to make the sauce, we chop everything with a food processor and add the egg, breadcrumbs and grated grana cheese. We mix everything together until we get a smooth dough.<\/p>\n<p>We start making the dough by placing the flour, eggs, a pinch of salt and a glass of water on a pastry board. We knead with our hands for 15 minutes until we obtain a smooth and rather firm dough that we will roll out with a rolling pin, obtaining a thin sheet.<\/p>\n<p>On half the sheet we lay, at an even distance of about 2 centimeters, small balls of filling and cover them with the other half of the sheet.
