Made exclusively from <strong>100% Italian sheep\u2019s milk<\/strong>, it is enriched during production with flakes of authentic Calabrian chilli, which give the product a unique character without ever being overly spicy.<\/p>\n<p>The compact, fragrant cheese releases an intense and inviting aroma, whilst on the palate it offers a full, rounded and harmonious flavour. The distinct notes of sheep\u2019s milk blend perfectly with the subtle liveliness of the chilli, creating a balance that appeals to both lovers of traditional cheeses and those seeking more refined flavours.<\/p>\n<p>The short maturation period of around 15\u201320 days keeps the cheese pleasantly soft and flavourful, enhancing its freshness and natural aroma.<\/p>\n<h3>Production<\/h3>\n<p>The pasteurised sheep\u2019s milk is processed using traditional methods and mixed with goat\u2019s rennet paste. After the curd has been broken down to the size of a grain of rice, flakes of Calabrian chilli pepper are added. The curd is then semi-cooked, pressed by hand into traditional baskets and subjected to a steaming process that promotes proper maturation.<\/p>\n<h3>Pairings<\/h3>\n<p>Excellent on its own, accompanied by homemade bread and traditional cured meats. It is perfect for platters, rustic starters and traditional Mediterranean recipes.
