An evening dedicated to the authentic flavours of western Liguria, where the stars of the show are the famous Ligurian fritters, prepared according to ancient local recipes.<\/p>\n<p>From 8.00 pm, the food stalls open their doors to visitors, offering the famous frescioi made with salt cod, courgettes, trombetta mushrooms and apples \u2013 specialities that showcase the simple, authentic cuisine of Liguria. The menu is complemented by other typical local dishes and concludes with the traditional \u2018Michetta\u2019, all accompanied by glasses of Rossese di Dolceacqua DOC, the wine that symbolises the Val Nervia.<\/p>\n<p>The festival continues amongst the characteristic narrow streets of the Rione Terra district, where bands and live performances bring the historic centre to life, creating an engaging and convivial atmosphere. Strolling through the stone-paved alleyways of the old town, you can enjoy an experience that combines local cuisine, culture and traditions.<\/p>\n<p>The Frescioi Festival was established with the aim of showcasing Ligurian cuisine and the region\u2019s finest produce, promoting local specialities and De.Co. (Municipal Designations) that represent the local culinary identity.
