Local produce takes centre stage: over twenty stalls offer locally sourced delicacies, seafood specialities and traditional Ligurian dishes, promoting short supply chains and artisanal quality.<\/p>\n<p>Strolling amongst the scents of the sea and the stalls, one feels as though they have entered a veritable \u201crepublic of taste\u201d, where every bite tells a story of fishermen, nets and ancient recipes handed down through the ages.<\/p>\n<p>One of the most fascinating moments of the event is the demonstration of seine fishing, an ancient traditional technique that has now become rare. Two fishermen, aboard a small fishing boat, lower a large bag-shaped net into the sea, whilst other men on the shore wait for the signal to begin hauling it in.<\/p>\n<p>The net is pulled in slowly by hand, in a collective effort that evokes ancient and authentic traditions. The public can watch this fascinating ritual and, immediately afterwards, taste the catch fresh from the sea, in an experience that combines spectacle and flavour.<\/p>\n<p>La Repubblica del Gusto is not just a food festival, but also an opportunity to rediscover the maritime identity of Noli, one of Liguria\u2019s most picturesque villages.
