Calabria is a beautiful region in the south of Italy, full of enchanting places and flavors that, once tried, are never forgotten. A dish that you will surely have to taste and will remain in your heart is the famous pasta and potatoes in the “Tajedda”. Pasta and potatoes in the “Tajedda” is a typical Silano dish. The “Tajedda” is a terracotta pot, widely used in the culinary tradition of southern Italy. The “Tajedda” allows you to cook food both on the fire and in the oven and gives it a particular taste. Now let’s see what we need to prepare this delicious first course:
Ingredients
For four persons.
- Penne pasta short 650 gr
- Yellow paste potatoes 600 gr
- Tomato sauce 1000 ml
- Extra virgin olive oil 3 tbsp
- Oregano q.b
- Salt to taste
- Pepper as needed
- Grated cheese 150 gr
- Water 1 glass
- Grated bread or crumbled breadcrumbs 50 gr
Process
Take the earthenware pan and pour a tablespoon of oil and a part of the tomato sauce previously dressed with oil, salt, pepper and oregano. With the past you have to cover the bottom of the “tajedda”.
Now add a little raw pasta, arrange on it a layer of thinly sliced ​​potatoes, sprinkle with grated cheese, a drizzle of oil, salt and oregano, cover the whole with tomato purée.
Continue to compose the dish in this way, alternating pasta, potatoes and tomato puree, making sure that the last layer is of pasta. Cover with the remaining cheese and a drizzle of oil, sprinkle with stale bread or breadcrumbs.
Pour a glass of water over all the contents, so it won’t stick to the pot much.
Heat the oven at 180 ° and place the “Tajedda” of pasta and potatoes inside, let it cook in static mode for about 30 minutes.
Alternatively, you can first cook on the stove for about 15 minutes and continue in the oven for another 20 minutes. The result will be the same.
