About this hotel

Our structure was inaugurated on 28 October 1991 with the name “Noviera”, the name of which derives precisely from the “Niviere” present on our soil, true and own tanks that were built in the colder zones of the Salento. Many people think that the Salento and the Puglia in general are the land of the sun and the sea and the biting cold is only a fleeting appearance in the course of the season autumn-winter. Historical locators tell us that between 1550 and 1850 the Salento and our area in particular was rich in “neviere”, site inside farms, placed a dozen meters below the soil, dug directly in the rock or built in masonry with ingenuity such as to ensure low temperatures and constant throughout the period of the year.From the very root of the term, is easily deducible that inside there were deposited snow. The system of collection and use of the same, it was not so immediate and simple, there was in fact a particular procedure which allowed to benefit in the long term. The snow precisely, was pressed up to form the plates of ice of a few tens of centimeters, separated by a small layer of straw well compact so as to allow an easy use in blocks (or cubes). Were thus created several layers between the compacted snow and straw on various levels. The finished product was cut into blocks and was sold mainly for therapeutic purposes, to treat intestinal disorders or lower fever. The changing climate has led to the disappearance of the old niviere, but in the various steps and transcriptions the ground where today stands the our structure has been called “noviera”, from here the name of the restaurant. Hotel Salento Our structure is situated in the heart of Salento in the village of Specchia. It is located 7 km from the sea and about 12 km from the beach, immersed in the green, with wide open spaces where you can read, walks. We have cycle track, guarded parking, games park for children. Possibility of shuttle from the airport to the structure, and from it in various marine. Our rooms have private bathroom with shower, satellite tv, mini bar, private balcony, service free wi-fi, air conditioning included in the price, and telephone. The structure is also equipped apartments and self-contained villas with kitchenette, immersed in the green with parking guarded, and various services. We have single rooms, double, triple, quadruple rooms, suites, possibility of cot, etc. Noviera Restaurant The Restaurant Noviera is located in Specchia and has three large rooms: Two internal and one external, surrounded by natural roccaglie and immersed in the green. Our menus cared for by the chef with experience propose both typical products of Salento, that regional and national specialities. Tasty wines, daily fresh fish, local meats, Typical products homemade as potato croquettes, rice arancini, meatballs and octopus, maltagliate baked in foil and various specialties of local fish, prepared in different ways (e.g., grid and husks flavored with herbs). The 70% of our products are of organic farming, products personally in our plots.
