The Caseificio Sociale Val di Fassa produces typical products of the alpine traditions. The agricultural cooperative was founded in 1963 and for over fifty years it has been interpreting flavours and aromas that tell the story of a territory.
Between tradition and modernity
The Caseificio Sociale Val di Fassa works with the most modern equipment, but with traditional methods. This means ferrying into the future the products that have always belonged to the territory. The equipment allows to respect the highest modern standards, but at the same time it also allows to continue the work and traditions of the ancient cheesemakers. Their facilities are also environmentally friendly with machinery and production processes aimed at saving energy. The new store in Pera di Fassa has been realized in the full respect of the alpine architecture. The members in fact, have chosen to adopt for their premises, the colors and the typical materials of the valleys to underline their belonging to the community and to respect the environment. The products of the Caseificio Val di Fassa are therefore an expression of an ancient culture that tells the harmony between man and nature, a timeless lifestyle that is the symbol of women and men living in the heart of the Dolomites.
An experience not to be missed
The production of the cheeses of the Caseificio Sociale Val di Fassa is made by transforming the milk through traditional methods. Salt, rennet and self-produced milk enzymes are the basis of cheeses with a simple but also refined taste. The variety of products satisfies the most attentive palates, in addition to the heart-felt cheese of Fassa, an authentic goodness, there are also, for example, the D.O.P. Trentingrana, the Canestrato a pepe or the Puzzone di Moena, another D.O.P., the Marmolada or the Stica. The possibilities of choice are really many with different tastes and flavours. The company is able to obtain high quality products because its cows of different breeds, the Brown, the Pezzata Rossa and the Grigia Alpina feed exclusively on genuine food. In summer the cows go to the Malga, typical pasture of the Italian Eastern Bees, where they feed on fresh grass and aromatic flowers of the territory to have a milk even more fragrant and rich. The Caseificio Val di Fassa, in addition to cheeses, also offers other products, including butter, Trentino speck, handmade dumplings, flour for polenta, jams, honey produced by the bees of the Alpine valleys. These are authentic delicacies that the Cheese Factory sends to customers to offer everyone the scent and taste of the Dolomites.
