The Relais Ciavatta Country Hotel, with its 21 hectares of property built on woods and the typical panorama of the Maremma countryside, is situated halfway between the village of Montemerano and Terme di Saturnia. The name of the Relais comes from the deformation of the medieval and dialectal term that means civetta (owl). In fact, this property have had this name since the Middle Ages, for the strong presence of owls that nestle on the oak trees’ branches of the area.
It is a country house building that dates back to 1800, property of the Conti family since always, true blue of Montemerano. The main structure of the relais was restored by keeping the styles and architectures unchanged. The rooms have been perfectly rebuilt and decorated with local antique furniture. Therefore, each room is different from the other, furnished with unique pieces in typical Tuscan style. Since 2001, the Conti family offers to its guests a quality welcome, warm and cheerful. In addition to the Relais, some cottages rise in the woods of the estate that starting from June will have a new swimming pool, in a very suggestive space that will also host weddings and receptions. The guests can visit the entire park and they will be able to get lost between olive trees, olive groves and an untouched Mediterranean maquis, or to admire the wonderful foals of the Maremma that pasture in the wild inside the borders of the park.
Therefore, the Relais Ciavatta is not only a charming residence but also a real biological farm, converted to biodynamic agriculture. No chemical treatment on plants or vegetation. The territory is preserved to a sustainable level as in the past centuries. In the garden, characterised by the same philosophy, you can admire native plants and trees typical of the Maremma countryside. There, they produce organic jams and oil and all the other products given to their guests come from local producers.
Inside the park, in fact, there is also the Osteria La Frasca, which bases its dishes on the traditional cuisine of the Maremma area, on the seasonality of the earth products cultivated there, that is to say that are always fresh. All the types of pasta are homemade, as they used to do in the past, and the meat always comes from breeding farms of the area. The Conti family, which used to work the meat for three centuries, knows its stuff on that topic. If you go to the Osteria, you cannot absolutely miss the piglet with scallions and honey, specialty of the Frasca, which combines the super tender meat cooked at slow temperature with the external crunchiness that the honey makes. Honey and wild fennel give to the dish the typical sweet and sour touch of the traditional medieval dishes of Tuscany. Then, in front of the Osteria, you will admire the oldest centuries-old oak tree of the area, where in the summer you can protect from the sun under it, while you taste an excellent meal and you will be able to enjoy one of the best views on the ancient part of the village of Montemerano.
