Production area from the vineyards of rocky hills of medium mix situated in the communes of Negrar, Fumane, San Pietro in Cariano and Marano di Valpolicella.
The varieties of grapes Corvina and corvinone (85%) with withering of the grapes for a period of approximately 60 days, Cabernet Sauvignon and Merlot (15%).
Sensory Impressions A deep, brilliant ruby red colour with lively garnet hues. It has an austere nose, a complex but perfectly harmonious bouquet of clear, intense aromas: dried flowers, walnuts and dried figs, forest floor, humus and mushroom juices, hints of iron and graphite, finishing with a fruity note of raspberry and wild strawberry. Extremely well balanced on the palate, it has a great structure, supported by smooth, ripe but vibrant tannins, and a delightfully fresh citrus note, leading on to more aristocratic hints of bitter cocoa and cinchona roots. A lovely, long and refreshing finish.
Food matchings Arlèo is a wine from large matchings: pasta with hare sauce or wild boar, risotto to tastasàl (a minced pork, beef and veal); international dishes such as the Châteaubriand, l'oca in confit and the Beef Stroganoff; preparations more "rustic" as "polenta e osei". Perfect then with hard cheese: Monte Veronese Old, Asiago cheese, Grana Padano 24 months.

Maturation 42 months in Slavonian oak barrels from 20-30 hl and barrels of 225 liters of French oak.
Aging at least 12 months in bottle.
Longevity if well preserved evolves for a long time.
