Production area Classic Valpolicella. From the vineyards of rocky hills of medium mix situated in the communes of Negrar, Fumane, San Pietro in Cariano and Marano, north of Verona.
The varieties of grapes corvina and corvinone (70%), Rondinella (30%), with withering of the grapes for a period ranging from 90 to 120 days.
Sensory Impressions deep ruby red, almost impenetrable, from garnet reflections of excellent seal, presents a bouquet decided but delicate at the same time, from the refined scents of ripe cherries, dark black currant, prunes; you feel soft flavors of milk chocolate, sensations of rhubarb, balsamic notes of tobacco mentolato: one olfactory spectrum refined, harmonious, elegant. The drink is toned, juicy, governed by a texture tannic, lively but enveloping and mature; the heat alcohol is well balanced by an invigorating freshness citrusy, which makes the wine important but "drinkable" at the same time.
Food matchings Amarone, being wine from raisined grapes, then concentrated, round and powerful, is nectar of long life. Seized after a few years of bottle, it is a wine for important dishes such as marinated hare, roast turkey tartufato, overdone and braised beef with red wine risotto to the Amarone. Drunk in his more mature stage, is that complement to cheese seasoned very even spicy. A chance to experience? Try it with cotechino.
