It has a bright straw yellow color with pre-existing and thin tight perlage; white and exuberant foam. The buquet reveals itself with well-pronounced accents, the ripe white fruit, which gives harmony and olfactory sweetness, has fragrant and floral scents, with delicate notes of leavened bread dough and small mountain flowers. It has a fresh and dry taste on a soft background. It has an erect nerve with a savory and persistent finish; acidity, in perfect harmony, contributes to enhancing its great personality and character.

Production area: The area of the "Serenissima" DOC extends in the foothills area arched between the chain of the Alps in the north and the Padana plain in the south. The soils, depending on the hilly areas, have a volcanic or sedimentary origin; the soils deriving from the flaking of these rocks are on average superficial, with a widespread presence of skeleton which allows an excellent drainage of rainwater. The vineyards are located on our Crocetta del Montello estate. Summers are cold and breezy and characterized by marked night-day temperature changes.
Grape variety: Chardonnay and Pinot Nero; percentages which, depending on the various vintages, may vary slightly.
Training system: Spurred cordon, simple inverted with a minimum density of vines per hectare not less than 3,500 vines.
Yield per hectare: On average 120 quintals of grapes.
Harvest period: end of August.
Vinification: The whole grapes are introduced into the pneumatic press and the must obtained from their soft pressing, after a first racking, is placed in the tanks at controlled temperature, where alcoholic fermentation takes place at a temperature of 17-19 ° C. Subsequently the wine remains to mature until the following spring.
Production: After forming the cuvée by assembling the two different types of wine and having appropriately dosed the yeasts selected by Villa Sandi, proceed with bottling. The bottles are then placed in stacks in the underground tunnels at constant temperature and humidity. Here the fermentation takes place for the second fermentation and the maturation of the sparkling wine on its lees for at least 24 months. After this period, disgorgement takes place and only after two months of rest the sparkling wine is ready to be placed on the market.
Pairing: It is an excellent aperitif, ideal with "finger food".
