It has a pale straw yellow color, intense, fine and persistent perlage; the bouquet is intensely fruity with evident notes of golden apple, fruit salad of exotic fruit and citrus. Persistent floral note reminiscent of acacia flowers and wisteria. The taste is fresh, dry, dry and austere, but at the same time pleasantly soft; it develops a thin foam in the mouth which releases delicate fruity sensations.

Production area: Cartizze is a small hilly area D.O.C.G. about 106 hectares of vineyards between the hamlets of Santo Stefano and S. Pietro di Barbozza in the municipality of Valdobbiadene. A real cru that comes from a perfect combination of a gentle microclimate and an ancient soil with moraines, sandstones and clays.
Training system: Double inverted with 2500 plants per hectare.
Yield per hectare: Maximum 120 quintals of grapes.
Harvest period: Second ten days of September.
Vinification: The whole grapes are introduced into the pneumatic press and the must obtained from their soft pressing, after a first racking, is placed in the tanks at controlled temperature, where it remains until its use for the production of sparkling wine.
Production: The must, added with yeasts selected by Villa Sandi, is placed in temperature-controlled containers where fermentation takes place at a controlled temperature of 15-16 ° C. In this way all the scents of the vintage are enhanced. Once the desired alcohol content and sugar content is reached, fermentation is stopped by refrigeration and, after a short period of rest, the sparkling wine is ready for bottling.
Pairing: It is sparkling wine that can open and close a pleasant evening at the table with the same ease. Ideal with marinated rock fish or salmon tartare.
