Production area: The production area of the "asolo prosecco" docg wine is located in the Veneto region north of Venice, in the province of Treviso, on the hilly areas consisting of montello and the Asolo hills located at the foot of the Dolomites. the hills are composed of medium deep soils, with good mineral endowment. the climatic peculiarity of the territory consists in the succession of mild springs, not too hot summers and again mild autumns thanks to the favorable southern exposure of the vine-covered slopes and the conformation of the reliefs. the grapes come from the estates certified according to the biodiversity friend standard.
Training system: Simple and double upside down espalier with 3000 vines per hectare.
Yield per hectare: Maximum 135 quintals of grapes.
Harvest period: Second ten days of September.
Vinification: After a careful selection, the grapes of some vineyards of the highest and sunniest hills were introduced whole into the pneumatic press. the must obtained from their soft pressing, after a first racking, was placed in temperature-controlled tanks where it remained until its use for the production of sparkling wine.
Production: The must, added with selected yeasts from villa sandi, is placed in temperature-controlled containers where fermentation takes place at a controlled temperature of 15-16 ° c. in this way all the aromas of the vintage are enhanced. once the desired alcohol content and sugar content is reached, fermentation is stopped by refrigeration and, after a short period of rest, the sparkling wine is ready for bottling.
Pairing: It is an excellent aperitif; accompanies finger food, seafood salads, semi-mature cow's milk cheeses.
