One of the flagship products of the dairy, produced only with goat's milk processed raw and aged over 60 days.
Much appreciated for the softness of the dough and the balance of flavours and aromas. Val di Fiemme is one of the few valleys in Trentino to have goat farms; goats are reared according to traditional methods and during the summer they are taken to medium and high mountain pastures.
In September, once the grazing of the heights is over, there is the usual "Desmontegada de le Caore" with the return to the village of the goats festively decorated with garlands and cowbells for the occasion.
