Il Tenero (“the softy”) has a soft, delicate texture. A simple, subtle flavour with layers of aromas. It is matured on pinewood planks for anything from 20 to 40 days. It has a rough, pinkish-yellow rind. A sweet yet slightly acidulous flavour typical of goat cheese. It makes an interesting pairing with fresh seasonal fruit such as grapes, pears, peaches or kiwis.
