La Tara (“the flaw”) is a highly aromatic cheese. A strong, sophisticated, “imperfect” flavour for true goat cheese connoisseurs. A hard, crumbly cheese. It is distinguished above all by its long ripening period, which may vary from five to six months or even more. Its rough, pale brown rind shows the signs of passing time. The aroma is intense, an explosion of character. Excellent for eating as is or for grating.
