Lo Stagionato (“the mature”) is a semi-hard, crumbly cheese with sparse, tiny eyes. An intense flavour with multiple aroma layers. It is aged on pinewood planks for anything from three to four months. It has a rough, ivory rind. A strong flavour typical of goat cheese. It makes an interesting pairing with nuts such as almonds, walnuts, pistachios and chestnuts.
