Il Primo Sale (“first salt”) is made ‘from dusk to dawn’. A white cheese with a soft, delicate texture. Its rich flavour and authentic aroma reflect the fresh milk’s characteristic perfumes.
This fresh cheese is salted only once and is ready to be eaten just a few days after being made. Perfect as part of the meal or at the end; an explosion of flavours when dressed with a drizzle of extra-virgin olive oil or enriched with a spoonful of honey.
