The Fasciato (“the swaddled”) is a little work of art. Good to eat, good to look at. It’s the result of our desire to experiment and play with Nature’s flavours. Before the ageing period begins the cheese is wrapped in leaves from our local wood. As the days pass, the leaves bind with the rind, imparting new flavours. Il Fasciato is a semi-hard, crumbly cheese with an intense flavour and rich aroma layers. Each cheese round is tightly wrapped in leaves.
