Desmontegada de le Vache' eco-sustainable ’Festival of Taste

It will be a “greeting from the kitchen” to anticipate the “Desmontegada de le Vache” in Predazzo.
From 25 September to 3 October, five restaurants in Val di Fiemme invite you to taste and savour tradition with the 17th edition of the gastronomic event “Autunno Traditional cooking: dalla natura con gusto”. The Capanna Passo Valles refuge, the Miola Restaurant in Predazzo, the Le Caore Restaurant in Tesero, the La Primoteca Restaurant in Predazzo and the El Molin Wine Bar & Bistrot in Cavalese will bring the flavours and colours of autumn to the table, combined with Fiemme products.

Therefore, from 29 September to 3 October, the “Festival del Gusto di Predazzo” will open a curtain on the value of sustainable mobility, which allows us to savour the “Great Beauty” of the Dolomites.
Through taste, the Festival reminds us that 2020 was the National Year of Tourist Trains and 2021 is the European Year of Railways, emphasising the future of the mountains, which is closely linked to the choices that will be made on the type and quality of travel.
Promoted by the Municipality of Predazzo, APT Val di Fiemme and Transdolomites, this festival highlights the treasures of the territory and tourism, mountain agriculture and its role in protecting the mountains. Gastronomy represents a cultural tool capable of combining local products with the landscape, as demonstrated by the collaboration with the Dolomites Cheese Route.

Other initiatives and events will accompany the “Desmontegada de le vache” on Sunday 3 October 2021. This will be a special edition. To avoid crowds, there will not be the usual parade of cows, but the tradition will be evoked by a lively parade of floats, with typical costumes, moments of folklore and applause for the farmers who have returned to the valley.
The festive atmosphere is already alive on Friday 1 October at 21.00, at the Cinema Teatro di Predazzo, with a MusicAutunno concert by the singer-songwriter Andrea Parodi accompanied by his band (tickets available on Primi alla Prima, a service provided by the Casse Rurali).

On Saturday and Sunday, the Festival del Gusto will host food and wine stands in the town’s main square, workshops for children about magic made with cream and Fiemme wool, show-cooking and the curious Taste Train with its gastronomic journey to the Andrea Dellantonio farm and the narrated cheese board to be enjoyed at the new bistro of the Caseificio Predazzo-Moena.

Also on Saturday there will be a spectacular parade of trucks, couriers and vintage work vehicles. In addition, on Saturday, from 5.15 p.m., there will be the checking and stamping of the historic cars of the tenth edition of Montagne d’Argento, cars that will cross Predazzo on Sunday, from 10.15 to 11.15 a.m., to reach the Valles Pass.
On Sunday 1 October, the event “Ciao Ciao estate, benvenuto autunno!” (Hello summer, welcome autumn!) takes the place of the traditional cow parade, offering a procession with traditional floats and an engaging travelling show by the La Pastiere theatre company.

THE TASTE FESTIVAL WANTS A SUSTAINABLE FUTURE
The Predazzo Taste Festival in 2019 was held up as an example by multi-starred chef Hans-Peter Niederkolfer, during the important Rimini conference dedicated to the quality of living. Niederkofler cited the Predazzo event as a good example for promoting quality of life in mountain environments.
Cultivating historical memory is also a good practice to reflect on this issue.
This is the aim of the Ora-Predazzo railway diffuse museum project, which has just been joined by a proposal for a Trento-Lavis, Val di Cembra, Fiemme and Moena diffuse museum, which follows the tracks of the Stern&Hafferl project for the Lavis-Moena tramway to be travelled on foot or by bicycle in the future.
